Cheese of the Week - Baby Blue - (Texas) - 6 oz
This is one of the Co-Op's favorite cheeses. Think brie meets blue cheese.
CKC Farms describes this cheese as:Modeled after an Italian Gorganzola Dolce, this blue cheese is pierced with holes and aged for 6-8 weeks depending on size. They are flipped daily to ensure proper blue mold formation on the outside and inside the wheel. This blue cheese has everybit of blue cheese flavor without a salty punch associated with most blue cheeses. It is creamy upon slicing and has a very nice sweet milky finish.
